Zuppa Toscana Soup

So you know those time lapse videos of food that are everywhere online?

It can be a video of a speedy dessert, an appetizer, full 8 course meal, doesn't matter - the time lapse videos not only make it look fast and easy, but of course it always looks delish.

And I'm a sucker for them.

I've lost count how many of those videos I have prepared after seeing them on Facebook, no doubt posted by someone purposely tempting me.

I'll just say Hummingbird cake right here and now.

Of course I must also mention my disclaimer now before I go any further, which I write on.every.food.post....... I'm not a food blogger, (recite it with me) I'm a food eater.

Every once in a while I stop drooling as I cook, long enough to take a few photos. 

Those food photos are never pretty either.  I'm not gonna be styling up my plate of ratatouille for pictures (and meat covered in sauce that usually tastes great but looks like vomit) when all I want to do is feed my family and spoon it into my mouth.

Such was the case with this time lapse video from 12 Tomatoes, of a soup like the one served at Olive Garden.  Zuppa Toscana.

This is how it went in my mind after I watched that video...... hey I like Olive Garden, but I've never had that soup, or maybe I have, I don't remember, but dammm that looks yummy and I want some now.

So I sent the mister to the store to fetch me some kale.  I had to tell him to just ask for it in the produce department.....fresh kale I said. 

I don't even know if they make frozen or freeze dried kale, but I wanted to make sure there was no room for error after he gave me that 'what the helll is that?' look.

I've been careful ever since he brought me back parsley one time instead of cilantro.

To have the full restaurant experience, I made dough for breadsticks, for the Olive Garden fake out.

The recipe really was as easy as the time lapse video, although it took me a bit longer than 31 seconds.  I added an extra tater to mine only because I wanted to make sure the spud lovers in my house had their share.

I followed the directions and tossed it all in the crock pot, adding the kale toward the end.

The house smelled good as it cooked, but anything that simmers with garlic usually gets my attention.

The bread sticks were just ok - with enough butter they were tasty.  Not sure what I did wrong on those.  Oh wait I know... I didn't follow a recipe, I made one up.  Yeah, better to stick with tried and true sometimes.

And the soup?  I'd make it again.  I really liked it although I did wish the bowl would have been followed by a plate of pasta.  Guess I better keep my eye out for a time lapse video that features a plate of fettuccine.

The ingredients were simple - nothing bizarre unless your wife has never asked you to pick up kale before - yet it was full of flavor.  I suppose other veggies could be added to a persons liking, but then it probably wouldn't be Zuppa Toscana just like Olive Garden now would it?

And right at the end after the grated parmesan went on and I was anxious to just eat it, I didn't even bother to find my camera.  I just snapped a photo with my cell phone. 

Isn't that what everyone does when they are out at a restaurant, Instagram their food?

  4. Those videos are fun to watch- I have never made dinner from one of them. Your soup looks delicious...and always add more potatoes if I'm coming over. What happened with your breadsticks?

  7. In Brawn's defense, they always seem to put the cilantro right by the parsley. And the labels are not always in the right place. I always smell my parsley and cilantro to make sure I have the right thing.
